Over the last few months I've started eating a little better.  Even clean, I might add -- when I'm by myself.  I haven't gone totally clean since I still have an unclean family (hahaha) but I try to sneak a few things in here and there. I try to cook a little cleaner but nobody really wants to join my clean team voluntarily. Yet.  But I feel lots better and I'm only eating great when I'm by myself.  Just imagine if we were all on the same train all the time!  I'll post more about my journey later but for now, enjoy this yummy granola.  I mostly use it to top my plain, greek yogurt and add some berries, but you could use it in various ways.  And if plain, yogurt isn't sweet enough for you, drizzle it with a little raw honey or 100% pure maple syrup. Now there is a good, clean breakfast for you!

Yummy Granola (that even ungranola types will like)

ingredients:

1 cup walnuts, chopped

1 cup almonds, sliced or chopped

1 1/2 cup rolled oats

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup unsweetened coconut flakes

1 cup golden raisins

1/2 cup dried cranberries

1/4 cup coconut oil, melted

1/4 cup raw honey

3 tsp cinnamon (I love the flavor of cinnamon in granola so I add even more than this)

1 tsp salt, either Himalayan or sea salt

1/4 tsp turmeric (while turmeric is SUPER healthy for you, we aren't making curry granola so don't go all crazy here)

2 tsp pure vanilla extract

directions:

Add the dry (or first 6) ingredients to a large mixing bowl.

Melt coconut oil in a measuring cup and then add the honey, cinnamon, salt, turmeric, and vanilla and stir.

Pour the melted mixture over the dry mixture and toss to coat. Spread mixture onto a parchment-lined baking sheet.

Bake at 225 for about 30 minutes.  Bake on a higher temperature if you want it dry and toasted.

After removing from oven, let it cool and add the raisins and cranberries.

Toss together and store in a air tight container for up to a month.

This is just how I like my granola, but you can add or delete whatever floats your boat.  As you can see in the photos, this time I added some chia seeds; It's good for you and it adds a little visual appeal too.

I put some in a quart jar so that I could share a little love.
