
I remember some things in my childhood more clearly than others. The smell of banana bread and Boiled Raisin Cake are two of those really clear memories. My mom baked them both often enough that it was somewhat routine. After I got married, I got my mom's recipes for both. I've never made the raisin cake but the banana bread is a tried and true recipe that never fails. Through the years I've tried several other very successful banana bread recipes but somehow mom's is still the best. Maybe it's nostalgia. Or it could just be fact.
Mom's Banana Bread

ingredients:
1/4 C Butter, soft
1 C sugar
1 egg
3 medium sized ripe bananas, mashed*
1/2 C milk
1/2 teas salt
3 teas baking powder
2 1/2 C flour **
1 C walnuts, coarsely chopped***
directions:
Preheat over to 350 and spray 4 mini loaf pans with cooking spray.
Beat butter, sugar and egg together until smooth.
Add mashed bananas
Add milk, salt and baking powder, mix until thoroughly mixed.
Add flour, changing attachment if using a Kitchen Aid.
Scoop into prepared pans, filling 3/4 full.
Bake for 40-45 minutes (more like an hour for regular sized pans)
Turn out of pans and let cool completely.

**I usually use about 1/2 C of the flour as wheat instead of white. You know, just to pretend to be heathy.
***Unless you are allergic to nuts, it's a crime to bake banana bread without them. Just sayin...
And also I just have to include this Snap. Yep, baking is worth the effort. :)
