Garlic Mashed Potatoes

A good friend and I made these for a huge event and EVERYONE mentioned how much they loved them, came back for more, or wanted the recipe. Simple, delicous and an elevated compfort food.

ingredients:

  • 25 pounds unpeeled red potatoes, washed and quartered

  • 4 pounds butter, room temperature

  • 1.5 pounds Romano cheese, grated

  • 1.5 cups chopped garlic, roasted

  • 1/4 cup salt

  • 1/4 cup dried oregano

directions:

  1. Bring a large pot of salted water to a boil. 

  2. Roast garlic while potatoes are boiling. (in foil at 400 degree oven for 40 mins)

  3. Add potatoes and cook until tender but still firm, about 45 minutes; drain. 

  4. Stir in butter, cheese, garlic, salt and oregano. 

  5. Mash with a potato masher or with an electric mixer.

Clearly this can (and should be scaled to a much smaller amount. But this is also great to have it listed in case you are hosted a large gathering. It's doable! We tripled this (multiple pots) and fed 125 easily.
