
Garlic Mashed Potatoes
A good friend and I made these for a huge event and EVERYONE mentioned how much they loved them, came back for more, or wanted the recipe. Simple, delicous and an elevated compfort food.

ingredients:
25 pounds unpeeled red potatoes, washed and quartered
4 pounds butter, room temperature
1.5 pounds Romano cheese, grated
1.5 cups chopped garlic, roasted
1/4 cup salt
1/4 cup dried oregano
directions:
Bring a large pot of salted water to a boil.
Roast garlic while potatoes are boiling. (in foil at 400 degree oven for 40 mins)
Add potatoes and cook until tender but still firm, about 45 minutes; drain.
Stir in butter, cheese, garlic, salt and oregano.
Mash with a potato masher or with an electric mixer.
Clearly this can (and should be scaled to a much smaller amount. But this is also great to have it listed in case you are hosted a large gathering. It's doable! We tripled this (multiple pots) and fed 125 easily.
