Lasagna that can be thrown together quickly. It's also easily divided into two pans; freezing  one. You can thank yourself later.

ingredients:

2 lbs Ground Beef

1/2 diced Onion

Salt and Pepper to taste

1/2 package Lasagna Noodles

1 jar Marinara Sauce - Your favorite spaghetti sauce will do but don't get too crazy with the flavor, a traditional tomato sauce is best.

1lb Mozzarella Cheese

1lb Cheddar Cheese

16 oz Ricotta Cheese

directions:

  1. Saute the onion and beef until the beef is cooked through.

  2. Cook the noodles to package directions.

  3. Remove most of the fat from the beef and put a couple tablespoons in the bottom of the lasagna/casserole dish.

  4. Layer noodles, 1/2 meat, cheddar & mozzarella cheese, 1 thick layer of ricotta.

  5. Then another layer noodles and meat.

  6. Top with cheddar and mozzarella cheese.

  7. Bake at 350 for 15-20 minutes to heat through.

  8. If frozen, thaw and heat through for 30 minutes.

  9. Let it rest for 10-15 minutes before serving.

It's going to be messy (and more of a casserole) if you don't let it rest a bit. The waiting is the hardest part. Or if you make it to saucy. One jar of sauce is the right amount for 2 lbs of meat. If you like things saucy, add it to each dish after serving - like the fancy restaurants do.
