Happy Valentines Day! In honor of love, here is a dinner my family loves.  It's a family favorite and I'm posting it for my college son who asked for the recipe today.  I hope your Valentines dinner will be as yummy as his.

One day, in the middle of a worldwide pandemic when restaurants were shut down, I was craving the Chinese Chicken Salad from Cheesecake Factory. I tried to replicate that yumminess for myself and voilà ... behold the beauty. This knock-off actually knocked it out of the park.

Lasagna that can be thrown together quickly. It's also easily divided into two pans; freezing  one. You can thank yourself later.

Chicken enchiladas in cream sauce are one of my great loves, and it’s mildly offensive to see a recipe with Cream of Chicken Soup. What even is that? They deserve better—no cans, no shortcuts, and certainly no calorie counting.

Béchamel sauce is the sauce that makes everything delicious. You can turn the most basic dish into something fantastic with an extra 10 minutes and a few ingredients that I know you have on hand. Béchamel sauce is sometimes called cream sauce or white sauce.
